Crab Stuffed Bass

Ingredients

3 cups crab meat (fresh, frozen, or canned)
12 fillet Silver Streak Hybrid Stiped Bass
2 tbsp. chopped onion
2 tbsp. chopped celery
2 tbsp. chopped mushrooms, canned
1/4 cup breadcrumbs
1 tbsp. lemon juice
1 tbsp. Worcestershire sauce
3 drops Tabasco sauce
1 dash black pepper
1 dash cayenne pepper
1 tbsp. chopped parsley
3 whole eggs
1 cup milk
1/2 tbsp. salt

Directions

1. Remove any remaining shell or cartilage from the crab meat.
2. Shred crab meat by hand and add all the ingredients, except unbeaten eggs. Stir well.
3. Add unbeaten eggs and work well into mixture. Let rest for approximately 30 minutes. Enough stuffing for 6 large bass.
4. Brush both sides of the bass with melted butter and place on baking tray. Place the stuffing gently on the bass fillets.
5. Bake in 400F oven for 20 to 25 minutes or until fish is cooked through. Sprinkle with paprika and parsley and drip melted butter on bass before serving. Serves 6.

THAWING INSTRUCTIONS

Immediate: Remove from freezer and place desired amount of shrimp in a clean bowl under cool running water until thawed.

Overnight Remove from freezer and place desired amount of shrimp in the refrigerator to thaw in a covered container or bag.
