Shrimp and Artichoke Heart Linguine
Ingredients
1 lb. Homegrown Shrimp
12 ounce can artichoke hearts, drained
1 lb. linguine (cooked according to package directions)
4 ounce can sliced mushrooms, drained
1 ½ tbsp. olive oil
1 ½ ounce sun dried tomatoes, chopped
½ cup red onion, minced
3 tbsp. fresh lemon juice
3/4 cup white wine
1 1/4 cup heavy cream
Parmesan cheese for garnish
Garlic and Italian seasoning to taste
Directions
1. Sauté red onion in olive oil for 1 minute.
2. Add white wine and lemon juice. Simmer mixture until coats the back of a spoon.
3. Add shrimp to mixture, cook until done. Add cream, artichoke hearts, mushrooms and sun-dried tomatoes to mixture.
4. Season with garlic and Italian seasoning to taste. Let mixture simmer 2 – 3 minutes.
5. Serve over linguine, and garnish with grated Parmesan cheese.
